Mike Simon is the Chief Operating Officer at Surfsnax, where he leads day-to-day operations for a brand redefining healthy snacking with sustainably sourced Atlantic salmon. Passionate about clean, functional nutrition, Simon helps drive the company’s mission to deliver simple, high-quality ingredients in convenient, on-the-go formats. He also plays a key role in expanding Surfsnax’s wholesale partnerships, bringing its innovative products to a wider audience.
Before joining Surfsnax, Simon was a Key Account Manager at Too Good To Go, the fast-growing sustainability-focused app that connects consumers with surplus food from restaurants and retailers. His work supported the company’s efforts to reduce food waste while helping businesses unlock new value.
With nearly 15 years in the food industry, Simon has worked at various food companies. At Ginnybakes, he served as Vice President of Product Management where he helped develop a national brand of organic, gluten-free cookies. As CEO of Organic Amazon, he helped bring a frozen acai bowl in a portable format to market. His experience over the years has deepened his focus on better-for-you foods and building products that resonate with health-conscious consumers.
